The environments you mention have different mechanics and a steeper learning curve. Also, my opinion, less programmer friendly - its for those who want to connect stuff together rather than write code. They usually produce not very dynamic experiences that feel very similar and mainstream.

Also, vvvv had its public release in 2002. TouchDesigner was released in 2008.
Although I do like Processing, I am surprised these visual languages haven't caught on as much as Processing.
